Italian Tartufo a la Galadrielle style


Here the base recipe that I usually use:

1 cup of sugar
2/3 cup of cocoa
2 teaspoons Nestle Gold (one of them or both decaffeinated)
1/3 cup of Water
4 Egg yolks + enough vanilla
500 ml whipping cream
2 tablespoons of amaretto
90 gr pure chocolate (molten)

Mix well the sugar, cocoa, coffee and water together and place in a heavy sauce pan. Bring to a boil and cook until everything is well mixed. Remove from heat and add Amaretto.
While the syrup is cooking, whip the egg yolks with vanilla until fluffy, while beating on the lowest level with the mixer, add the hot syrup in a continuous fine stream. Beat for some 3-4 minutes.
In a large bowl whip the cream and add the chocolate mixture. At the end fold in the chocolate. Chill well before serving.

This time I made a few modifications:
In the heavy cream I added 1/2 pureed banana and the juice and pulp of 1/2 orange.
Next time I'm planning to add orange liqueur jointly with the amaretto... :)
