Stuffed Zucchini



The low calories (18 kcal. in 100 gr.) in zucchini make them a choice for balanced and healthy eating. Zucchini also supply useful amounts of folic acid and potassium.
On the other hand beef contains important quantities of nutrients as protein, zinc, vitamin B12, selenium and phosphorus.

Now the recipe:
You need:
3-4 medium-sized fresh zucchini
1 medium-sized head of onion
light soy sauce, white pepper, cumin
250 gr minced beef
100 ml tomato juice
50 gr black olives cut in fine slices
parsley, grated Parmesan


What to do:
Wash well zucchini and cut off ends without peeling them. Cut each zucchini in half lengthwise and then breadthwise. Remove pulp from the middle of each piece of zucchini using a spoon.
In a pan fry in oil the removed zucchini pulp finely cut, add the chopped onion, soy sauce and fry for 3-4 minutes. Then add the minced beef, white pepper and cumin and leave for other 4-5 minutes. Add the tomato juice and leave to simmer for some 5 minutes on medium heat. At the end add parsley and olives.
Place zucchini shells in an oiled large baking pan and stuff them with the meat mixture. Bake for some 30 minutes on 200 degrees.
At the end sprinkle with Parmesan cheese.




Tip: When serving you might use the Yogurt, dill and garlic sauce from the previous recipe.
