This is a very easy, fast and light veggie soup.
half onion head
2 tbsp olive oil
1 cup of fresh carrots cut in sticks
2 cups of petits pois
1 cup of Brussels sprouts
2 tbsp rice (I used basmati, but long greain is also OK)
salt, herbes de provence (thyme, rosemary, basil, majoram, oregano, tarragon)
200 ml yogurt, fresh onion
Heat the olive oil in a casserole, and the largely cut onion head and simmer for several minutes until soft. Then add the rest of the vegetables, stir well and add 1.5 litres of water. Leave to simmer for 5 minites and add the rice. Leave again on medium heat for more 10 minutes. At the end add salt and herbes de provence.
Remove from heat and set aside for several mintes before adding the yougurt. Garnih with finely cut fresh onion.
