Chicken and Onions Soup



I planned to make a French onion soup, but in the middle of the recipe, I just changed my mind and decided to opt for a chicken and onions soup :)
Fortunately I didn't cut too many onions.
So the recipe is the simplest:

peel and chunk 2 large onions
put oil in a pan and when hot add the onion, reduce the heat to very low and let the onion caramelise for some 20 minutes, stirring occasionally.
Rinse well about 70 gr of sushi rice, soak in cold water and leave for 10 minutes.
Add about 250 gr finely chopped chicken breast to the onions, stir well and add boiling water about a litre, and raise the heat a little.
Let boil for 1o minutes, lower hear and add salt and white pepper. Add the rice and leave to simmer for some 10 minutes.
Move aside from heat and leave under lid for other 10 minutes.

When serving add lemon juice, dried oregano and parsley.




I served with baguette rings with salmon paste and chives, and hummus and salmon with a green queen olive.
