Cafe au Lait with Dark Cherries Cake




There's nothing better than cafe au lait for me in the morning. Okay, sometimes it's a green tea cup, but lately with all the lack of light, I used to prefer coffee...
(Waiting desperately for the end of December and the days starting to increase again.)
And what to add to the morning cafe au lait? I had some shortcrust pastry leftovers and some cherry filling leftovers, so I thought why not combining both into something tasty :)
You can guess that I just lined a tin with the shortcrust pastry, prick with a fork and put it in  a hot oven for about 10-15 minutes.
Then I added the cherry filling. So far so good, but I needed something more sophisticated to stick the other ingredients together, that's how I decided to make something like a frangipan, but of course different. Sometimes I find it really difficult to follow a recipe. It's a free-style cooking, I call it :D ...
That's hay I did:
I mixed well two medium eggs with a 2/3 cup of caster sugar, added a hint of cinnamon, then a cup of almonds and a 1/2 cup of flour, some 60-80 ml of milk and a tea spoon of baking powder. Everything well mixed I pour over the cherries and baked on some 170 degrees in fan oven for about 30 minutes.
