Dried Figs and Apricots Cake
I just have to write this recipe otherwise I might forget it :D And the result was worth remembering it.
This is a what-I-have-in-the-fridge/cupboard recipe. My aim was to achieve a relatively moist and cake, but without being undercooked.
So:
2 eggs
70 gr sugar
two generous scoops of honey
100 ml single cream
100 ml grape seed oil
about 200 gr flour
1 tsp baking soda
50 gr ground almonds
100 gr diced dried (partly rehydrated) dark apricots (some special ultra-sweet Turkish variety with darkish skin)
100 gr diced dried (partly rehydrated) figs
vanilla
a pinch of cinnamon
Method:
Beat the eggs with the sugar, add the following ingredients one by one mixing well after each ingredient - grape seed oil, single cream, honey, almonds and flour, baking soda, vanilla, cinnamon. At the end gently incorporate the diced dried fruits.
Put in a loaf pan lined with baking paper for achieving soft edges. Bake at 160-180 degrees depending on the oven for about 1 hour, 1h and 10 minutes, or until a toothpick inserted in the centre comes out clean.
