Spinach and Rocket Filo Pastry (Banitza)
For 20 cm diameter tin
1 onion
150 gr rocket
100 gr spinach leaves
2 large eggs
200 gr Greek feta cheese (made of sheep and goat's milk)
70 gr yoghurt
15 gr butter - shaved
9 filo sheets
4 slices Raclette cheese
1 cup boiling water
Fry the onion, spinach and rocket in a pan with olive oil. When ready remove from heat. In a bowl beat the eggs with the cheese and yoghurt and add the green leafy mixture.
Place three filo sheets in the tin, sprinkling with the butter shavings in between. Add half of the filling, repeat with the next three filo sheets and the butter and add the rest of the filling, then top with the last three filo sheets and butter.
Top with the Raclette slices.
Bake at 190 degrees Celsius for 15 minutes, add 1 cup boiling water and bake for more 10 minutes at 180 degrees.
