#16 Garlic soup, Spanish style
1 l water
1 head of garlic, cloves separated
2-3 tbsp oil
1 onion, finely chopped
¼ tsp smoked sweet paprika
1 tsp flour
salt
Boil the water and add the garlic cloves. Lower the heat and simmer gently for an hour. This will give the garlic a very mild, almost sweet taste.
Take the garlic cloves out and peel. Discard the skins and mush it into a puree.
Heat the oil in a small pan and fry the onion until translucent. Add the paprika and flour, stir for a minute and add some of the cooking liquid, one tablespoon at a time. Avoid allowing any lumps to form.
Add the garlic puree, stir and put the mixture back into the pan with the rest of the cooking liquid. Season and simmer on medium heat for another 20 minutes.
