#21 Simple Cream of Spinach Soup
This is a very simple yet full of flavour and delicious soup. You need a blender for that one too.
Serves 4:
1 tbsp vegetable oil
2 large garlic cloves
4 good-sized potatoes chopped
200g young spinach leaves
1.6 l boiling water
1 chicken stock cube
sea salt
100 ml single cream
Method:
Wash the spinach leaves and dry them. In a casserole heat the oil and add the spinach leaves, stir well for about 3-4 minutes.
Add the chopped potatoes and the salt and continue stirring for more 1-2 minutes.
Add the boiling water and the stock, cover with a lid and let simmer for 30 minutes or until the spinach leaves are tender.
Leave aside to cool a bit, add the garlic cloves and then blend until everything is smooth.
Return to the heat, add the single cream and heat but don't let to boil.
Cool and serve after 6-8 hours.
