Red Pepper and Three Cheeses Pizza

Red pepper pizza
When I lived in Bulgaria, I really liked pizza, although I knew it was far from the original classic Italian pizza. But it was tasty.
When I came to the UK, I couldn't find pizza to enjoy as much as I did back home. I really don't know what's the problem with pizza but it doesn't taste the same as I expect it to.
Thus I found the most popular pizza dough recipe on the Bulgarian Internet, reportedly the recipe of one of the country's Pizza chain restaurants. I have no idea how classic or Italian this recipe is, but it's good, it's fast and most important - it's fool proof.
It's ready in only 12 minutes!
The thing I like even more is that I can use whatever ingredients I like at the moment, most of which (if not all of them) are just unpopular here, and it's probably a sacrilege to top pizza with them.
Well, not for me though.

So, the recipe for this veggies pizza:

Makes pizza base for 20x30 cm flat tin

pizza dough:
1 egg
yeast + 1 tsp sugar + 100 ml tepid water
about 2 cups white flour (250-300 gr)
4 tbsp olive oil
salt

2 red Ramiro peppers chopped
3-4 mushrooms - sliced
handful of spinach
red pesto
200 gr grated gouda cheese
50 gr blue cheese sprinkled
80 gr hard goat cheese chopped

To make the dough activate the yeast. In a bowl place the flour, make a well in the middle and add the egg. Add the reactivated yeast, mix well and start to knead. When everything is combined smoothly add the olive oil. If needed add more flour or more olive oil.
You'll know the dough is ready when it start to separate easily from your hands.
Place on a lined tin adjusting the size with your fingers.

Spread the red pesto on top and sprinkle with the grated cheese. Add the spinach leaves, mushroom slices, red pepper slices and sprinkle the rest of the cheeses on top.

Bake for 12 minutes at 220(fan)/240 degrees Celsius.

Serve immediately.
