#27 Clear Lamb and Vegetables Soup with Rice

This is probably far from a traditional soup, because I used fillet cuts for it, so I can be served as a main dish as well.


Serves 6

400 gr lamb fillet chopped
4 turnips - peeled and coarsely chopped
4 carrots - peeled and coarsely chopped
1 courgette - coarsely chopped
1 large onion
1.6 l boiling water
1 tbsp olive oil
black pepper
salt
4-5 bay leaves
2 cloves of garlic


boiled rice for serving


In a pan heat the oil and add the onion, stir for 1-2 minutes and add the meat. Continue stirring on high heat for 5-6 minutes.
After that add the chopped vegetables, stir for more 3-4 minutes. Then cover with the boiling water, add the spices, cover with a lid an simmer for 20 minutes.
Serve over plain boiled rice.
