#57 Chilled Melon and Mint Soup with a hint of chilli
More like a fresh juice than a soup, it can be served as an elegant starter.
And most of all, it's good for your health because it's raw and unprepared, just served in an elegant way the whole goodness within and untouched.
Just make sure you serve it right away because this soup won't stand for long.
It's better to use already cooled melon before blending, than to leaved it in a fridge afterwards.
For additional freshness, serve over ice cubes.
serves 4:
1 ripe Galia melon - seeded and cut into chunks
1 sprig fresh mint leaves
1/2 seeded and finely sliced green chilli
Put everything in a blender and blend smoothly. Serve immediately.
