Goat's Cheese and Courgette Muffins
Fast to make and savoury salted muffins nice for breakfast or even a vegetarian starter:
1 courgette grated
125 gr goats cheese
2 cups flour
2 spring onions finely chopped
sharena sol (traditional Bulgarian seasoning including fenugreek seeds, salt and aromatic sipces)
1/2 cup olive oil
1 tsp bicarbonate of soda
Beat the eggs with the cheese. Add the olive oil and flour and the bicarbonate of soda. Mix very well. Add the grated courgette and the onion. Sprinkle the seasoning and mix well until smooth.
Heat the oven to 180 degrees. Line a muffin sheet with paper cases and fill the 2/3 with the dough.
Bake for 20 minutes.
Best served hot.
