Chicken and vegetables skewers

I prepared these for the birthday of my son. I wanted to have something light, suitable to eat outdoors, yet full of flavour and colours, because we eat with the eyes first :)
I think the result was worth it very much, I am looking forward for another outdoors even to have these again.

Chicken and vegetable skewers BEFORE

Makes 20 skewers 25-cm-long each.

To prepare the chicken:

2 kg chicken thigh fillets cut into chunks
Be aware that the chicken will shrink when cooked, so allow larger pieces
2-3 onions cut into pieces
half bunch fresh coriander finely chopped
100 ml beer
50 ml olive oil
1 green chilly sliced
50 ml light soy sauce

Mix all the ingredients in a large bowl, cover with plastic wrap and place in the fridge for at least 24 hours.

For the skewers:

500 gr small button (or chestnut) mushrooms
500 gr cherry tomatoes
4-5 onions peeled and quartered, then thinned 2-3 times
6 green peppers cut into 4x4 cm pieces

Method:
On the next day remove the plastic film from the chicken, and start making the skewers.
Start with a mushroom, continue alternating meat and vegetables and finish with a tomato. Allow 2 tomatoes per skewer.
