#20 Beetroot, Apple and Horseradish salad

The new year comes with new year resolutions which I hope are going to make a difference in a positive direction.
For 2012 in my blog I wish to see more savoury, healthy, vegetarian and vegan recipes and reduce the number of desserts featured.
However, because desserts are a true passion for me, I'm more than happy to cook them for other people!

And to start the year on the healthy side I'd like to share this delicious salad I stumbled upon on while selecting the Christmas menu. Apparently it's traditional for Scandinavian Christmas table and the main ingredient is pickled beetroot. The original recipe is here .

A couple of years ago I would stay way away from any beetroot and would have never preferred it. But this changed now as I found a variety of delicious recipes and ways to prepare it. The best way I think is to smooth the taste of beetroot with a dollop of cream or yogurt.

The salad is great very easy, light in case you chose half-fat cream of even better a 0% fat strained yogurt instead of the cream, and simply delicious!

The quantity I used here is enough for 2:

Products:

1 cup cubed pickled beetroot

3 pickled cornichons

1 green apple cubed and peeled (optional)

2 tbsp capers

1 cup half-fat cream

1 tsp mustard mayonnaise

1 tsp creamed horseradish

2-3 sprinkles of fresh dill


Method:

In a bowl mix all the ingredients. Cover with the cream, mustard mayonnaise and creamed horse radish. When serving sprinkle with fresh dill.

Refrigerate for 10-15 minutes or enjoy straight away!

I didn't really like beetroot until very recently either - but it's great with slightly sharp things like oranges and apples. Dairy, as you suggest, is also a good way of making it slightly less cloying. This looks delicious and I love the colours!
