A "difficult" recipe, because it needed a lot of time for preparing and cooking. However, the result is worth it.
Now the recipe:
Peel and cut two courgettes, pour on light soy sauce and red wine and leave for some time.
Cook the cannelloni for 5 minutes in salted boiling water then drain and set aside to cool.
Fry some fresh garlic in olive oil and add the courgettes with the soy sauce and the wine. Few minutes later add sliced mushrooms and finely cut roasted and peeled red pepper. Leave for several minutes. Add white pepper, salt and basil.
Stuff the cannelloni with the ready filling and bake in oven.
In the same time, fry in little oil grinded almonds (30 gr.), add 100 gr sour cream, 100 g yogurt, 100 g blue cheese, and when everything is well mixed, pour it over the cannelloni, in the oven.
A few minutes before taking out the dish from the oven, place or sprinkle yellow cheese on each cannelloni.
