To do this kind of a bread you need two doughs - a white and peary and a dark and pistachio mixture.
for the white mixture you need:
3 egg whites, 100 gr white sugar, 1 small pear (pureed)
and about 100 gr white flour and baking powder
Whip the egg whites with the sugar until they form ribbons, then add the pear puree and at the end add finely the flour with baking powder.
for the pistachio mixture you need:
70 gr copped pistachios
3 egg yolks
50 gr dark muscovado sugar
100 gr flour with baking powder, a pinch of nutmeg
Butter a loaf mould and start transferring the to mixtures gradually, as follows, three tbsp of the white mixture, then 3 tbsp of the white mixture, until the end.
Bake on 180 degrees C until ready.

Your food pictures and recipes are excellent. I must say i've never tried anything like this before. Wonder what you could serve this with ...some cheese ?? what did u do with it ?
hm, I haven't thought about cheese, but iit's a nice idea. As far as I remember we ate it with hot pukka pleasure tea with honey. I suppose any other spicy and aromatic tea will do :)
