Pistachio and Mascarpone stuffed Dates



It seems that filled dates are traditional Christmas dessert not only in Europe. In France the date are filled with marzipan and pistachio nuts, and rolled in caster sugar, while in India they are filled with spices and ghee, thanks to Mango Power Girl for the recipe.
An idea I had about what kind of filling to put into these large dates - pistachio nuts and Italian mascarpone with a hint of orange juice and several drops of orange blossom water.
No need to sweeten the mixture because the dates are sweet enough.

The recipe:
for about 18-20 dates, split opened and pits removed

120 gr Italian mascarpone
2 tbsp freshly squeezed orange juice
50 gr pistachio kernels - chopped
couple of drops of orange blossom water

Mix the ingredients well and pipe the mixture into the dates. Refrigerate in airtight container.

A big favourite!

Alita i have just one word for you ... Superb !!! really clever of you to get inspired by the ghee dates. I've grown up on those as well , but i swear i'd easily swap those for these mascarpone version.

Mango Power Girl, thanks for the compliments! But I am not sure this recipe improves yours, it's just a different way to stuff them. I'm still looking for ghee to try your recipe, I thnik the cardamom should be bringing such a nice taste to them!
