Cranberries and White Chocolate Rounds



To make these utterly delicious festive fruit and chocolate rounds is very very easy.

You just need:

400 gr white chocolate of good quality - chopped on equal parts
100 gr dried cranberries
1 tsp rum
2 tbsp creme de cassis

In the previous day put the cranberries in a bowl and cover with the rum and creme de cassis to rehydrate a bit. leave in a cool place.

On the day put a large saucepan with water on the heat. Place the chocolate chops in another bowl inside the saucepan, making a bain marie. The water in the saucepan shouldn't boil. The chocolate temperature should not reach and go beyond 50 degrees Celsius. Stir often to allow the temperature to distribute equally and to prevent overheating. You can remove the saucepan from the heat before the chocolate has melted completely, and continue stirring until it is fully dissolved.

Place half of the chocolate mixture on a square tin, sprinkle with the dried fruit - it's better if they're well strained. Then cover with the rest of the chocolate. It's important to work fast.
Leave on a cool place overnight.

On the next day cut out rounds with a cookie cutter.

They're ready to consume.
