This soup contains super foods that are supposed to make you healthier. I don’t know about this but I can assure you that it will definitely put a smile on your face and make you feel happier. And in my book, achieving happiness is the most important thing you can do for improving your health!
To make 2 servings you will need:
30 g buckwheat
1 tbsp linseed
2 tbsp olive oil
½ onion, finely chopped
½ small leek, finely chopped
1 small garlic clove, finely chopped
200 g butternut squash, diced
salt
black pepper
2 teabags of jasmine green tea
150 g tofu, diced
1 tbsp light soya sauce
A few drops of sesame oil
Technique:
Put the buckwheat and linseed in a pan with boiling water and cook for 15 minutes. Cover the pan and set aside.
Heat the oil in another pan and fry the onion and leek. Add the garlic and butternut squash, stir for a minute. Season with salt and pepper, add water and cook for 20 minutes, or until the squash has softened.
Add the tea and let it infuse for 3 minutes. Take the bags out.
Add the buckwheat, linseed, soya sauce, tofu and sesame oil.
Serve immediately.
