#11 Raw Broccoli and Walnuts Salad
I've been obcessed lately with eating the broccoli raw. They have so much mnore flavour and texture, and more of their good stuff can be absorbed if they are eaten raw.
Named a super vegetable broccoli have been popular for their anti-cancer properties. They also are very rich in vitamin C and calcium among others.
Actually the calcium from green leafy vegetables is better absorbed by our bodies than the calcium from milk.
So here on number 11 is the Raw Broccoli and Walnuts Salad:
Products: (serves 2)
3 cups raw broccoli divided into florets
2/3 cup chopped walnuts
7-8 lightly steamed asparagus tips
dressing:
1/2 cup walnut oil
1/2 cup balsamic vinegar
salt and pepper
crushed garlic
Method:
Simply combine all the ingredients in a large bowl, cover with the dressing and leave to marinate for half an hour before serving.
