It's a very tasty energy booster to kick-start your day!
My mother usually says that a boiled egg in the morning equals a cup of coffee in its refreshing and toning effect on you.
I don't know if this is true, but this vitamins-packed salad will surely wake you up.
And the red-veined sorrel leaves I picked from my tiny window garden, how cool is that - to grow your own fresh herbs on the window!
Products:
serves 2 small bowls or 1 medium-sized bowl:
1 boiled egg
4 baby yellow plum tomatoes halved lengthwise
8 kalamata olives
4 radishes sliced
the leaves of one romaine lettuce
a handful of fresh red-veined sorrel leaves
1/2 lemon - reserve 2 slices and juice the rest
8 anchovies fillets about 30-40 gr
2 tbsp etra virgin olive oil
The anchovies and the olives will give enough salty taste to the salad, so no additional salt is required. And the radishes balance the taste with their freshness.
Method:
Combine the leaves in small bowls and mix, toss with the olive oil and lemon juice. Arrange the tomatoes, anchovies, radishes and olives. Garnish with the lemon circle and serve.
